Makes 6 servings / Prep Time: 15 min. / Cook Time: 36 min.
2 tablespoons vegetable oil
1 pound potatoes, peeled and cut into 1/2 inch pieces
1 large onion, chopped
1 large green bell pepper, chopped
1 clove garlic, minced
3 tablespoons chili powder
1 (14.5 oz.) can Red Gold DICED TOMATOES CHILI READY
1 (15.5 OZ.) can Red Gold KIDNEY BEANS, drained and rinsed
2 cups Red Gold TOMATO JUICE
1 (6 oz.) can Red Gold TOMATO PASTE
1 teaspoon dried oregano
1/2 teaspoon crushed red pepper
• In a large soup kettle (a big pot works just as well), saute potatoes, onion and green bell peppers in oil for 5 minutes.
• Add garlic and chili powder; cook an additional minute. Be sure to coat the vegetables with the garlic and chili powder.
• Add remaining ingredients and stir to combine. Bring to a boil, reduce heat and simmer for 30 minutes or until potatoes are tender and the mixture has thickened.
If you enjoy chili with heat, this is a meal you’ll definitely enjoy. For a milder chili, the crushed red pepper can be omitted. Even Better! Add shredded cheese to the top to make it even tastier.
